Gardener: Elaine
Martin and Dorsey Barger started more than
a restaurant when they opened Eastside
Café in
1988. They created a connection to the
origin of food through the garden that
supplements Elaine's signature recipes.
Dorsey tends the organic garden, fertilized
with her home-made compost. Her ideas work
for any small space garden, even apartments
on balconies. With cinder blocks, stock
tanks, and salvaged materials, she creates
many garden options with a bunch of tools
or a bunch of cash.
