4 tablespoons butter
2 cups yellow onion, diced
4 tablespoons Port wine
4 tablespoons balsamic vinegar
1 1/3 cups sun-dried cranberries

Melt butter in a medium sauce pan. Add onion and sauté for 30 minutes, until caramelized, stirring often. Add remaining ingredients and simmer for 30 minutes. Purée one cup sauce in food processor. Return to saucepan and stir to combine.
Yield: 2 cups

1 fresh jalapeño, seeded and minced
3 cups of crumbled cornbread
1/2 cup pecan pieces
1/2 cup chicken stock
1/4 teaspoon fresh sage, minced
1/4 teaspoon salt

Preheat oven to 350 degrees. Melt butter in a small sauce pan over medium heat. Sauté onion and celery for 20 minutes. Add jalapeño and sauté for 5 minutes. Combine crumbled cornbread, onion mixture, and remaining ingredients in a medium mixing bowl. Toss to combine. Put stuffing in a small baking dish. Bake for 20 minutes.
Yield: 3 cups
