Because of the dozens of requests we've had, we are re-printing this soup recipe. It is absolutely the all time favorite of our guests and just in time for the holidays! So please accept this as our gift.
 

2 tablespoons olive oil
3 cups onions, diced
4 cups mushrooms, sliced
2 teaspoons fresh garlic, minced
1 cup carrots, grated
4 tablespoons flour
1/2 cup dry white wine
4 cups heavy cream
4 cups chicken stock
2 tablespoons fresh parsley, minced
4 cups cooked chicken, diced
2 cups artichoke hearts, drained
2 tablespoons fresh basil, minced
1 teaspoon salt
1/2 teaspoon black pepper

In a large soup pot, heat olive oil over medium heat. Sauté onions, mushrooms, garlic, and carrots for 30 minutes, stirring often. Add flour and cook for 5 minutes, stirring constantly. Add white wine, heavy cream, and stock. Whisk until smooth. Add remaining ingredients and simmer for 30 minutes.

Yield: 14 cups

It’s thought to be cool in some wine circles, to answer the question, “What kind of wines do you like?” with “oh, you know, ABC,” secret wine geek code for “Anything But Chardonnay.” It’s hip to shun the poor hapless Chardonnay grape. Anyone can find great sparkling wines from California or the Champagne region of France- there’s really no challenge to that at all, but did you know that South Africa makes really cool sparkling wines, that Germany makes fabulous sparkling Rieslings, or that Australia makes a totally dry sparkling Shiraz that will blow your mind? And the really great thing is that these wines are SO much more affordable than the sparklers from California and Champagne.
