A
Gift for the Heart
To keep your hearts and souls happy and healthy
this season, we’ve given you the recipe to one of
our favorite soups. It’ll
warm you right down to your cockles.

• 6
tablespoons butter,
margarine, or vegetable oil
• 1 cup onions, diced
• 1 stalk celery, diced
• 2 tablespoons garlic, minced
• 1 tablespoon fresh ginger,
peeled and grated
• 4 cups potatoes, peeled and diced
• 5 cups chicken stock,
vegetable stock, or water
• 2 1/2 teaspoons curry powder
• 1/4 teaspoon chili powder
• 1/4 teaspoon turmeric
• 1/4 teaspoon cumin, ground
• 4 tablespoons flour
• 2 cups whipping cream, half and half, or milk
• 2 tablespoons fresh parsley, minced
• Salt and pepper |
In a large soup pot, sauté onions, celery, and garlic in 2 tablespoons
butter, margarine, or vegetable oil over low heat for 15 minutes until browned.
Add ginger and continue cooking 3 minutes. Add potatoes, stock, curry, chili
powder, turmeric, and cumin. Cook over high heat for 20 minutes until potatoes are tender. Remove
from heat. When potatoes have cooled, transfer mixture to a blender or food processor
and purée.
In a separate saucepan, make a roux by heating 4 tablespoons butter, vegetable
oil, or margarine and whisking in 4 tablespoons of flour. Cook roux over low
heat for 2 minutes, whisking constantly.
Return potato purée to soup pot and add whipping cream, half and half,
or milk, and parsley. Reheat to hot, but not boiling. Whisk in roux and continue
stirring until soup has thickened. Salt and pepper to taste.
